Cook with me Tuesday- Mississippi Pot Roast

Hey guys and welcome back to another Cook with me Tuesday! I'm sharing my Mississippi Pot Roast recipe with you today and I have to say... I thin this is the easiest recipe I've shared so far. It's a fantastic meal to feed a large group of people for a party or pot luck or if you're like me and just trying to feed your hungry family. It tastes great and is a crockpot meal so you can throw it together before work or in the morning and leave it to cook until you're ready for it. Here's what you'll need:

1 pack Au Jus Gravy mix
1 pack Ranch dressing seasoning
2 Chuck roasts
1 large jar Pepperoncini peppers
4-5 tablespoons butter

What you'll do:

1. take out your thawed or fresh chuck roast and place them into the crockpot and puncture with a few holes from a fork.

2. Add in the 4-5 tablespoons of butter. I like to cut mine into little pads of butter first to help it melt.

3. Dump in both the package of Ranch dressing and the package of Au Jus mix. This will give your roast some great flavor as well as create a gravy for it.

4. Dump in some of the pepperoncini pepper juice as well as some of the peppers. Now this is completely up to you and how much spice you like. Personally, my family likes a lot of spice so I added almost the whole jar of juice as well as all of the peppers.

5. Put your crockpot lid onto the pot securely and then turn the temperature setting to High heat for 4-6 hours or low heat for 6-8 hours or until the beef is tender enough to shred easily.

6. Once the roast is ready, shred the meat and serve hot.

Serving Suggestions:

I like to serve this a couple of different ways. Either serve it with mashed potatoes and corn or green beans or you can serve it up as a yummy sandwich on some good crusty bread with a slice of provolone cheese melted on top
. Both are great options and taste delicious.
