Cook with me Tuesday- Cheesy Chicken Broccoli Rice Casserole

Hey Guys and welcome back to my blog. Today I wanted to share with you my recipe for my Cheesy chicken, broccoli, rice casserole. This is an easy meal to whip up for the family and is a great way to use up any left over rice or chicken you may have in you fridge. Now I happened to make enough in this recipe to make two casseroles so, as I mentioned in my video on my YouTube channel, I ended up putting half in a freezer bag to save for a later date.

All in all I think this only took me about 15 minutes to prep and another 30-45 minutes to bake in the oven, so it is pretty fast to make. So let's get started!

What you'll need

2- 10.5oz cans cream of mushroom soup
1- 10.5oz can cream of mushroom soup
4 chicken breasts ( mine are pre-baked from another meal)
1 cup bread crumbs ( can be plain or Italian seasoned)
3 cups Shredded Sharp Cheddar cheese
2 Bags cooked broccoli or 2 heads fresh cooked broccoli
1/2 Large yellow onion
4 bags brown rice
1 tsp salt
1 tsp garlic powder
1 tsp onion powder

Cook brown rice to the instructions on the box. I used the boil in a bag brown rice this time around and it took about 10 minutes for that to cook through. Once that's done, go ahead and steam your broccoli. I used the microwave Steamer bags to save time. I believe those take about 6 minutes, but again just fix it to the directions listed on the bag.

While the rice and broccoli are cooking, I take out my 4 precooked chicken breasts and cut those up into bite size bits.  Using precooked chicken really helps me to cut down on time for this recipe as well as allows me to use left overs so they don't go to waste. I also mix up about a cup of bread crumbs and cheese to make the topping for the casserole.

Once everything is chopped and cooked and ready to go I place everything into a big bowl (saving the breadcrumb mixture to the side) and mix it all together. Once everything is mixed together I dump half of the mixture into a prepped, greased pan and preheat the oven to 350 degrees Fahrenheit. While the oven is heating up, I then top the casserole with the breadcrumb mixture and pat everything out so that it is even. The other half of the mixture I then place into a labeled freezer bag and throw it in the freezer for a quick and easy meal later!

This is one of those meals that you can either serve it just by itself or with a side salad and extra veggies... I'd recommend some seasoned green beans!
